2 t garlic powder
2 T  coconut milk
½ t salt
1/8 t ground black pepper
1 pound rice spiral pasta, shells or spaghetti
4 oz cooked *Gluten free ham, bite size

Melt butter in a medium, non-stick saucepan over medium heat. Add vegan cream cheese and garlic powder, stirring with wire whisk until smooth. Add coconut milk, a little at a time, whisking to smooth out lumps. Stir in salt and pepper. Remove from heat when sauce reaches desired consistency. 1. This is as good as an Italian restaurant's alfredo!

  2. I wanted to find an alternative sauce for pasta. I searched on line and found an Alfredo sauce that was made with cream cheese instead of cheese and cream. So I substitued vegan cream cheese, soy butter and a little bit of coconut milk for the cream. And I now have one of Mac's and mine favorite pasta dishes! Yum!

  3. I made this today and didn't have any of spiral pasta I usually use. I had some Notta Pasta (rice) Linguine. It was really good!
