Living & Loving Gluten & Casein Free is an informative and creative blog to enlighten those facing the challenges of a Gluten Free Casein Free lifestyle! There are original recipes and other recipes I have acquired along my GFCF journey! With tips, tricks and modifications to enhance your recipes and entice your taste buds. Topics include trips to the grocery store to find the best products available, awareness of ingredient labels, money savings with on-line ordering and understanding and providing answers in overcoming your daily frustrations and challenges. The blog will also take on issues with eating out, family meals, children lunches, traveling and planning for meals on the go. Mac's 'Mac and Cheese' GFCF


I had thought of this recipe but hadn't tried it yet.  Kris Kohler, a friend from Autism Speaks, said she made her kids Mac and Cheese with Daiya cheese and it was really good so I went ahead and tried it for lunch today! Yay! Cheesy, gooey and good flavor!

Gluten Free Pasta (I used half a package of fusilli)
1/2 cup Vegan Daiya cheese (give or take)
1/2 cup canned Coconut Milk (give or take)
1 T Earth Balance Soy Butter
1/2 cup cooked hamburger (salt and pepper to taste)

Cook pasta as directed. Drain and put back on low heat. Add casein free butter, Daiya cheese and coconut milk stir until melted. Add hamburger! I would usually add peas but thought we would just try this first!

Mac ate three bowls! Enjoy!
